Peach Dressing

This dressing adds brightness to end-of-summer salads with fresh peaches and fresh rosemary.

  • 1 large, ripe peach
  • 3 1/2 Tablespoons neutral flavored oil (such as avocado oil)
  • 2 Tablespoons white wine vinegar
  • 2 Tablespoons water
  • 1 Tablespoon maple syrup
  • 1 teaspoon fresh rosemary, roughly chopped
  • 1/4 teaspoon minced garlic
  • Salt and pepper, to taste


  1. Peel and slice the peach. Add the peach and the remaining ingredients to a food processor. Blend until smooth, about 1 minute. This recipe makes one cup of dressing, but can be easily doubled for larger quantities.
