This end-of-summer Peach Dressing is great on salads as we transition into the fall season.

This dressing recipe uses fresh peaches and fresh rosemary. It adds a bright flavor to salads and is ready in under ten minutes. So go to your local fruit stand or grocery store and buy some ripe peaches!
First, peel and slice a peach. Add the sliced peach to a food processor, along with the other ingredients, and pulse until smooth. Your dressing is finished! Easy, right? Fresh Peach Dressing is perfect for an end-of-summer salad, as a sauce to top some seafood, or as a dip for breaded chicken. I could definitely see how tasty this could be to dip some grilled shrimp in, with some grilled veggies on the side. Chicken fingers dipped in this dressing? Yum! A turkey sandwich with a little drizzle of this dressing, spinach, and some goat cheese also sounds nice. So many options! This dressing adds brightness to end-of-summer salads with fresh peaches and fresh rosemary.
- 1 large, ripe peach
- 3 1/2 Tablespoons neutral flavored oil (such as avocado oil)
- 2 Tablespoons white wine vinegar
- 2 Tablespoons water
- 1 Tablespoon maple syrup
- 1 teaspoon fresh rosemary, roughly chopped
- 1/4 teaspoon minced garlic
- Salt and pepper, to taste
Peel and slice the peach. Add the peach and the remaining ingredients to a food processor. Blend until smooth, about 1 minute. This recipe makes one cup of dressing, but can be easily doubled for larger quantities.
