I love the creativity presented in this cookbook. Before receiving this cookbook, I only used zucchini noodles and cauliflower rice as grain substitutions. There are so many other possibilities presented in this cookbook, and the results are always amazing!
One recipe that I come back to again and again is the Zucchini Soup Bowl. It is the perfect cozy soup for a cool day and it is cooked so quickly. I love adding some additional vinegar or Yuzu hot sauce (I find it at Trader Joe’s) for an additional kick.

Friends who are trying to eat less grains or carbs may appreciate this book, but I also think that anyone who is interested in their health would enjoy this cookbook. The recipes are flavorful, there are lots of veggies, and there are options for nearly any diet.
