It’s easy to put together several at a time so that you’ve got access to these treats throughout the week. Bonus, they make an awesome grab and go breakfast for the warmer months.
Chocolate Chai Chia Pudding
The perfect grab and go breakfast for warmer months.
- 3/4 cup chia seeds
- 2 Tablespoons peanut butter
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground ginger
- 1/3 cup cocoa powder
- 1/2 cup coconut milk
- 3/4 cup almond milk
- 1/4 cup sweetener of choice (maple syrup, sugar, monkfruit sugar, etc.) more to taste
Combine all ingredients in a large bowl and stir until fully combined. Store in the fridge for at least 20 minutes to let the chia seeds absorb the liquids, and then evenly distribute the pudding between four jars or containers. Store in the fridge until ready to eat.
