This Chocolate Chai Chia Pudding is an easy and healthy breakfast or snack. Make several at the start of the week to have them ready for taking from the fridge.
Try saying Chocolate Chai Chia five times fast! This might be a tongue twister, but it is also a delicious breakfast or healthy midday snack. It’s easy to put together several at a time so that you’ve got access to these treats throughout the week. Bonus, they make an awesome grab and go breakfast for the warmer months.
I prefer making these chocolate chai chia pudding cups using these small 8 ounce jars. If you want to save some money, you can also reuse small jars from jams/jellies for storing the pudding.
When making these pudding cups, you’ll want to let them sit for a bit in the mixing bowl before pouring them into the jars. This allows the chia seeds to gel up, thickening the pudding and making it easier to evenly distribute in the jars. If you do not let it sit, you might have uneven amounts of the milk mixture and chia seeds.
But no need to worry! You only need to let it sit for about 15-20 minutes. You’ll know when it’s ready because it will be decently thickened. For reference, it will be thick, but not as thick as pictured below. That picture was taken after the pudding sat in the fridge for a few hours.
Chocolate Chai Chia Pudding
The perfect grab and go breakfast for warmer months.
- 3/4 cup chia seeds
- 2 Tablespoons peanut butter
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground ginger
- 1/3 cup cocoa powder
- 1/2 cup coconut milk
- 3/4 cup almond milk
- 1/4 cup sweetener of choice (maple syrup, sugar, monkfruit sugar, etc.) more to taste
Combine all ingredients in a large bowl and stir until fully combined. Store in the fridge for at least 20 minutes to let the chia seeds absorb the liquids, and then evenly distribute the pudding between four jars or containers. Store in the fridge until ready to eat.
