I’m currently getting about 2-3 zucchini squashes per week from our garden and I’m loving it because these are one of my favorite vegetables. If you are also growing zucchini, or if you are grabbing some from your farmer’s market, here are some of my favorite ways to use up the zucchini that is in season right now.
I have included several different ways of cooking zucchini – spiralized, roasted, and more. I think spiralizing zucchini is a fun way to use it up. What is your opinion on spiralized zucchini? I love zoodles, because I love zucchini! However, I’m also a huge fan of pasta, so I don’t like replacing regular pasta noodles with zucchini noodles.
